Should a beginner fish a Senko weightless or add a bullet weight?
Weightless. The slow horizontal fall is the entire reason a stick bait works, and a bullet weight at the nose replaces it with a fast nose-down drop. Add weight only when wind or depth stops you feeling the bait.
What the weight actually changes
Tyler Berger built a tank and filmed soft plastics falling in it. The comparison that matters here is pegged against unpegged, meaning a bullet weight jammed tight against the bait versus one left free to slide on the line.
Pegged, the bait pops up on a hop and sticks the landing. It drops straight down and only the tips of its legs move. Unpegged, the weight separates from the bait on the fall, and the bait glides down slowly while the hook’s own weight pulls the nose gently over as it settles. He describes the second one as reading natural.
That is a difference in fall behavior produced by moving a weight a few inches. Removing the weight entirely pushes further in the same direction. A weightless five-inch stick bait falls on its own density, which is slow, level, and shimmering from both ends.
Matthew Stefan works the same principle from the other side. He fishes a bulky bait unpegged with a quarter ounce specifically so the weight separates and the bait travels horizontally rather than dropping, and he fishes it almost as slowly as a Carolina rig. Both anglers are chasing a slow horizontal fall. A pegged bullet weight is the thing that destroys it.
The artifact: when weight earns its place
Stay weightless by default. Add the least weight that solves the specific problem in front of you.

Notice that five of six fixes leave the weight unpegged. Peg it only when heavy cover forces you to, which is Berger’s stated rule.
What we do not know
Berger’s tank footage compares pegged against unpegged. Nobody in our sources filmed weighted against weightless side by side, and we have run no test of our own. The extension is reasonable and it is still an extension.
Do this next
Fish one bank weightless. If you go thirty minutes without feeling the bait land, add a 1/16 ounce weight and leave it unpegged. Change one thing at a time.
